David H. Chow has been making fine chocolates and desserts in Toronto restaurants for some time now, so it's nice to see him out on his own in the spotlight, where he deserves to be.
Because his new product line, David H. Chow Chocolates & Confections, is freakin' impressive. A heady mix of handmade sweet and savoury selections include local ingredients such as delectable Rosewood Honey and the high-end stuff like Valrhona's Grand Cru Couvertures.
Depsite not having a sweet tooth, I devoured the Popcorn Pretzel Bar. A perfect blend of rich flavours and light textures, the butter almond shortbread base gave way to a layer of salted vanilla caramel stuffed with salted pretzels and caramel corn, finished with Maldon sea salt. The exterior? Dreamy Valrhona 70% Guanaja dark chocolate.
In addition to a phenomenal Espresso Crunch Bar (with crunchy wafer cookie layered with Valrhona 41% Jivara milk chocolate infused with freshly ground Sense Appeal espresso beans and with a final sensuous dip of Valrhona 55% Equatoriale dark chocolate), there's Classic Vanilla Shortbread
Classic Chocolate Bar Line. There are nuts bars, ones with Valrhona 32% Dulcey roasted white chocolate infused with
vanilla bean with crushed candied cashews, crushed Ontario buckwheat
honey honeycomb and coarse Maldon sea salt, and ones with great complexity and texture like the matcha green tea-infused Valrhona 33% Opalys white chocolate with crushed black and white sesame brittle and puffed rice. I tried a dark chocolate and rosemary bar that was so captivating, it has me thinking I should add cocoa to my stews this autumn.
David's real talent is in finding supreme ingredients, balancing them precisely and presenting them in a simultaneously modern and fun fashion. In another pastry chef's or chocolatier's hands, these blends might have been too rich, too cloying, too extreme. There is a true elegance in his deft hands.
That, along with the colourful packaging makes them ideal gifts. Now whether they all get to the intended recipients, I'll never tell.
